Kerala Matta rice or Red Matta rice is a short-grain variety grown in the Palakkad district of Kerala. Due to its coarse texture, earthy flavor, this rice is preferred in Kerala, Karnataka, and Sri Lanka. It is also ideal for dosa, idly, appam and other rice dishes of these regions. This rice maintains its pinkish brown hue and shape even when cooked. Unlike white rice, this takes longer to cook.
